This meal is super easy on the budget - it's just sausage, rice, broth and frozen veggies.

One Skillet Kielbasa & Rice
Serves 4-6
Per serving: Calories= 385, Protein= 11g, Fat= 22g, Carbs= 31g
Ingredients
Kielbasa
2 Tbsp olive oil
1/2 tsp each of salt and pepper, garlic powder, onion powder
1 tsp each of: chili powder, paprika
1 1/2 cups broth
1 cup rice (I like jasmine)
1 cup mixed frozen veggies
Directions
Slice the kielbasa into discs. Heat the oil in a large skillet over medium-high heat.
Add the sliced sausage and cook until browned, stirring and tossing them occasionally.
Add the seasonings and mix together.
Pour in the broth, rice and veggies. Bring to a boil.
Once at a boil, cover and reduce heat to low. Cover for 20 minutes - don't open the cover to check on it or the rice won't cook properly.
Stir and serve!
