Hash - the term for busy moms that simply means: whatever is in the fridge to throw in a pan for dinner.
It's not fancy. It's just a simple meal of simple food!
But honestly, this recipe is delicious and you could easily make this your own by throwing in any veggies you need to use up before they go bad. This version here tastes like Thanksgiving, and I can't get enough!
I buy these sweet potatoes in the frozen veggie section at Target. They just make life a whole lot easier.
I even threw on some shredded cheese for good measure, because why not?!
Ground Turkey & Sweet Potato Hash
Ingredients
1 Tbsp butter
1 pound ground turkey
12 oz bag frozen sweet potatoes (or about 2 medium sized sweet potatoes peeled and cubed)
2 ribs celery, diced
Salt and pepper to taste
1/2 Tbsp Italian seasoning
Directions
1) Melt butter in a large skillet over medium-high heat. Add in ground turkey and brown, breaking the meat up into bits.
2) Add in the sweet potatoes, celery and seasonings. Stir and cook a few minutes to toss together.
3) Reduce the heat to low and cover, let it cook for about 5-10 minutes until the sweet potatoes are soft when pierced with a fork.
Enjoy with or without cheese!
