Carnitas (Slow Cooked Pork)

The slow cooker is any mom's best friend. Which means the Instant Pot is like your siamese twin! If you have either gadget, you're going to love this recipe!
This pork is super flavorful and so easy. Plan to cook this recipe at the start of the week because it makes a ton, so you can use this meat in various ways for more than just one meal.
You can enjoy this meat in taco shells or with tortilla chips or piled in a taco salad with extra veggies and avocado.

Carnita Tacos
Serves 10+

Ingredients
3 pound boneless sirloin pork roast, cut into 2-3 sections
2 tsp salt
1 tsp pepper
1 Tbsp oregano
2 Tbsp ground cumin
1 tsp onion powder
1 tsp garlic powder
2 limes, juiced or about 1/4 cup lime juice
1 orange, juiced, yielding 1/4 cup juice
1 cup chicken broth or water
Optional toppings: avocado, cilantro, queso cheese, pineapple, etc.
Directions
1) Combine salt, pepper, oregano, cumin, onion and garlic powders, and juices in a small mixing bowl. Pour the seasoning mixture over the pork roast, rub into the meat.
2) Cook the roast by either method:
-Slow cooker: add the roast, cover the pot and set to low for 6-8 hours or on high for 4-5 hours.
-Instant Pot: Add the roast + 1 cup of broth or water. Cover and lock the lid. Set to 'Manual' for 75 minutes. Allow to naturally release pressure.
3) Once the meat is fully cooked through and tender, reserve a cup of the liquid and discard the rest. Shred the meat finely with forks or with an electric mixer.
4) Preheat your broiler. Spread the meat evenly across a rimmed baking sheet. Broil for 5-10 minutes until nicely golden and crisp, closely watching so the meat doesn’t get burnt.
5) Serve on tortillas or chips with shredded lettuce, cilantro, avocado, diced tomato, crumbled queso cheese, etc. Enjoy!
