Apple Chicken Salad

Forget the pumpkin spice - apples are what fall is made of!


Chicken salad is my all-time favorite recipe to make ahead of the week for grab-and-go lunches or a yummy dinner.


The mayo recipe down below is a gem of a recipe in and of itself. If making your own mayo scares you, I promise you it isn't that hard!

All you need is a hand immersion blender like this one to make the most flavorful, thickest and creamiest mayo you've ever tried.

Apple Chicken Salad

Serves 6-8

Calories: 348, Protein: 15g, Fat: 29g, Carbs: 5g


Ingredients

3 chicken breasts

1 recipe homemade mayo *recipe below (or about 1 cup of store-bought mayo)

1 tsp mustard

1 apple, diced

2 ribs celery, diced

1/8 cup red onion, diced

Salt and pepper to taste

1 tsp lemon juice


Directions

1) Cook the chicken breasts however you prefer. I use the Instant Pot: ‘Manual’ for 20 minutes with 1 cup of water, allow to naturally release.

2) Add all ingredients to a large mixing bowl. Toss together and chill in the refrigerator for at least 30 minutes.

3) Enjoy on its own, over a bed of greens, or in a fluffy croissant.


 

Homemade Mayo

Ingredients

2/3 cup avocado oil

1 egg yolk

2 Tbsp vinegar

1 tsp mustard

1/4 tsp garlic powder

1 tsp salt


Directions

1) Add all ingredients into a large jar or any tall and narrow cup/container.

2) With an immersion blender, insert the blender into the jar and blend while slowly mixing and raising the blender towards the top. Blend until mayo is thick and all oil is blended through.
